卵を割ったり、混ぜながら思わず味見をしたくなるアーモンドクリームづくりと、甘い香りに包まれたワークショップがはじまりました。
第1回目のワークショップでつくったオリジナルフェーブを使って、ガレット・デ・ロワをつくります。ガレット・デ・ロワなどのパイ菓子は、お菓子作りの中で難易度が高いようで、松坂先生は使用するパイシートの厚みを0.5ミリ単位で何度も試作、検討してくださいました。
アーモンドクリームの上にフェーブを忍ばせる作業は、みんなとても愉しそうな表情で挑んでいました。
パイ生地に切り込みで入れる模様のクローバーや太陽にも、それぞれ幸福や生命力の意味があることを教わり、丁寧に模様を入れていきました。

The workshop to make Galette des rois using original féves. A place with many ovens was needed so that Galette des rois made by 17 students could be baked in a short time. The workshop was held at the kitchen in the Gas Salon run by the Gas Bureau of the City of Sendai in cooperation with them.
First Mr. Matsusaka demonstrated the way to make a Galette des rois. Then the children were divided into teams of three to four people and worked together. Assistants joined each team to support the children. Among them were Mr. Matsusaka's wife, students at Matsusaka Cooking School, and students at Kyoto University of Art and Design. While waiting for the Galette des rois to bake, Ms. Hitomi Oguchi, who participated as an assistant, shared her story about Galette des rois and experiences in France during her school days there.
Mr. Matsusaka told us at the pre-meeting that making cakes such as the Galette des rois is a very difficult part of confectionery making. To teach 17 students how to make such a cake in a short time and to let them make great cakes, Mr. Matsusaka experimentally made crusts that were 0.5 millimeters thick over and over again.
